Ingredients
Scale
- 1 pound fresh strawberries, hulled and halved
- 8 ounces white chocolate, chopped
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 tablespoon lemon juice
- 1/4 cup graham cracker crumbs (optional, for garnish)
- Fresh mint leaves (optional, for garnish)
Instructions
- In a microwave-safe bowl, add the chopped white chocolate. Microwave it in 30-second intervals, stirring in between, until its completely melted and smooth. Be careful not to overheat it, as white chocolate can burn easily.
- Once melted, set the bowl aside to cool slightly while we prepare the cream cheese mixture.
- In a large mixing bowl, add the softened cream cheese. Using an electric mixer, beat the cream cheese on medium speed until its smooth and creamy, about 2-3 minutes.
- Gradually add the powdered sugar and continue to beat until well combined.
- Next, add the vanilla extract and lemon juice to the cream cheese mixture. Beat again until everything is well incorporated.
- Pour the melted white chocolate into the cream cheese mixture. Mix on low speed until fully combined, scraping down the sides of the bowl as needed.
- In a separate bowl, pour in the heavy whipping cream. Using a clean electric mixer, beat the cream on high speed until stiff peaks form, about 3-5 minutes.
- Gently fold the whipped cream into the white chocolate cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
- Place the hulled and halved strawberries cut side up on a serving platter or cupcake tray.
- Fill each strawberry half with the white chocolate cheesecake filling using a piping bag or small spoon.
- Sprinkle graham cracker crumbs on top for added texture, if desired.
- Garnish with fresh mint leaves for a pop of color and freshness.
- Cover the assembled strawberries with plastic wrap or place them in an airtight container.
- Refrigerate for at least 1 hour, or 2-3 hours for enhanced flavor.
- Remove the strawberries from the refrigerator and take off the plastic wrap.
- Arrange them on a serving platter or individual dessert cups.
- Drizzle melted white chocolate over the top or sprinkle additional graham cracker crumbs for an extra touch.
- Serve immediately and enjoy!
Notes
- For a richer flavor, consider using high-quality white chocolate.
