Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup coleslaw (store-bought or homemade)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat or the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and smoked paprika on both sides.
  3. For grilling: Cook the chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). For baking: Place in a baking dish and bake for 25-30 minutes until fully cooked.
  4. Remove from heat and let the chicken rest for 5 minutes.
  5. In a medium bowl, mix mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, onion powder, and smoked paprika.
  6. Blend until the sauce is smooth and creamy.
  7. Adjust the tanginess or sweetness by adding more vinegar or honey, and season with salt and pepper.
  8. Use two forks or a stand mixer to shred the chicken into bite-sized pieces.
  9. Combine the shredded chicken with half of the white BBQ sauce in a large bowl, stirring until well coated.
  10. Toast the buns on the grill or in the oven until golden brown.
  11. Pile a generous amount of BBQ chicken mixture on the bottom half of each bun.
  12. Add a handful of coleslaw on top of the chicken.
  13. Place the top half of the bun on the sandwich and garnish with fresh parsley if desired.
  14. Pair with crispy potato chips, sweet potato fries, or a fresh garden salad.
  15. Savor the delicious combination of flavors and textures in each bite.
  16. Store any leftover chicken mixture in an airtight container in the fridge for 3-4 days.
  17. Reheat in the microwave or stovetop until warmed through, or make fresh sandwiches with the leftover chicken.
