- 1 cup brown sugar (packed)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk (or any plant-based milk)
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium apples)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup rolled oats (for topping, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the dry ingredients: flour, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk until well mixed.
- In another bowl, mix the wet ingredients: applesauce, almond milk, vegetable oil, and vanilla extract. Stir until well combined.
- Pour the wet mixture into the dry ingredients and gently fold together using a spatula or wooden spoon. Do not overmix; a few lumps are okay.
- Fold in the diced apples and, if using, the chopped walnuts or pecans.
- Line a muffin tin with paper liners or lightly grease it. Fill each muffin cup about 2/3 full with batter.
- Optionally, sprinkle rolled oats on top of each muffin.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
