  • 1/2 cup all-purpose flour

  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup bell pepper, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the round steak pieces dry with paper towels.
  2. In a shallow dish, combine the flour, salt, and pepper. Dredge each piece of steak in the flour mixture, coating all sides evenly. Shake off excess flour and set aside.
  3. In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the floured steak pieces in batches, searing for about 4-5 minutes on each side until browned. Remove and set aside.
  4. In the same skillet, add the sliced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  5. Pour in the beef broth, scraping the bottom of the pan to release any stuck bits. Stir in the diced tomatoes (with juice), Worcestershire sauce, thyme, paprika, and bay leaf.
  6. Return the seared steak to the skillet, nestling it into the sauce. Add the sliced carrots, celery, and chopped bell pepper on top.
  7. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours until the steak is fork-tender.
  8. After cooking, remove the lid. If the sauce is too thin, remove the steak and vegetables and let the sauce simmer uncovered for a few more minutes to thicken.
  9. Taste the sauce and adjust seasoning with more salt and pepper if needed. Return the steak and vegetables to the skillet to warm through.
  10. Serve by placing a generous portion of steak and vegetables on a plate, spooning sauce over the top, and garnishing with freshly chopped parsley. Enjoy with mashed potatoes, rice, or crusty bread.
