  • 1 cup water
  • 1 cup lemon juice, freshly squeezed (about 68 lemons)
  • Sparkling water or club soda, chilled
  • Ice cubes
  • Fresh strawberries, sliced (for garnish)
  • Lemon slices (for garnish)
  • Fresh mint sprigs (for garnish, optional)

Instructions

  1. Prepare the Strawberry Puree: Rinse strawberries, hull them, and combine them in a blender or food processor with sugar and lemon juice. Blend until smooth. Strain through a fine-mesh sieve for an extra smooth puree (optional). Chill for at least 30 minutes.
  2. Make the Lemonade Base: In a saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Let cool completely. Juice lemons to get 1 cup of fresh juice. Combine cooled simple syrup and lemon juice in a pitcher. Adjust sweetness to taste. Chill for at least 30 minutes.
  3. Assemble the Spritzer: Fill glasses with ice. Add 2-3 tablespoons of strawberry puree to each glass. Pour lemonade base over the puree, filling the glass about halfway. Top with chilled sparkling water or club soda. Stir gently to combine.
  4. Garnish and Serve: Garnish with fresh strawberry slices, lemon slices, and mint sprigs (if using). Serve immediately.
