Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 quart strawberry ice cream, softened
- 1 cup fresh strawberries, hulled and sliced
- 1 cup whipped cream (store-bought or homemade)
- 2 tablespoons powdered sugar (for sweetening whipped cream, optional)
- 1 teaspoon vanilla extract (for sweetening whipped cream, optional)
- Chocolate syrup or strawberry sauce (for drizzling, optional)
Instructions
- In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until all the crumbs are evenly coated with butter.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the bottom of a measuring cup to pack it down for a sturdy crust.
- Place the crust in the freezer for about 15 minutes to set.
- Let the quart of strawberry ice cream sit at room temperature for about 10-15 minutes to soften.
- Scoop the softened ice cream into a large mixing bowl and gently fold in the sliced fresh strawberries.
- Spread the strawberry ice cream mixture into the prepared graham cracker crust, smoothing the top with a spatula.
- Cover the pie with plastic wrap and return it to the freezer for at least 4 hours, or until firm.
- If making your own whipped cream, chill a mixing bowl and beaters in the freezer for about 10 minutes.
- In the chilled bowl, pour in 1 cup of heavy cream. Add powdered sugar and vanilla extract if desired.
- Beat the cream on medium-high speed until soft peaks form, being careful not to overbeat.
- Cover the whipped cream and place it in the refrigerator until ready to assemble the pie.
- After the pie has frozen for at least 4 hours, remove it from the freezer and take off the plastic wrap.
- Spread the whipped cream evenly over the top of the strawberry ice cream layer, creating swirls or peaks if desired.
- Drizzle chocolate syrup or strawberry sauce over the whipped cream for decoration.
- Garnish with whole strawberries on top for an extra touch.
- Cover the pie again with plastic wrap and return it to the freezer for at least 1 hour to firm up the whipped cream.
Notes
- For a sweeter whipped cream, adjust the amount of powdered sugar to taste.
- Feel free to substitute other fruits or sauces for a different flavor profile.
- This pie can be made a day in advance and stored in the freezer until ready to serve.
