Description

Enjoy a refreshing Strawberry Ice Cream Pie with a crunchy graham cracker crust, creamy strawberry ice cream, and a light whipped cream topping. This no-bake dessert is perfect for warm days and special occasions, making it a delightful treat for everyone!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 quart strawberry ice cream, softened
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup whipped cream (store-bought or homemade)
  • 2 tablespoons powdered sugar (for sweetening whipped cream, optional)
  • 1 teaspoon vanilla extract (for sweetening whipped cream, optional)
  • Chocolate syrup or strawberry sauce (for drizzling, optional)

Instructions

  1. In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until all the crumbs are evenly coated with butter.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the bottom of a measuring cup to pack it down for a sturdy crust.
  3. Place the crust in the freezer for about 15 minutes to set.
  4. Let the quart of strawberry ice cream sit at room temperature for about 10-15 minutes to soften.
  5. Scoop the softened ice cream into a large mixing bowl and gently fold in the sliced fresh strawberries.
  6. Spread the strawberry ice cream mixture into the prepared graham cracker crust, smoothing the top with a spatula.
  7. Cover the pie with plastic wrap and return it to the freezer for at least 4 hours, or until firm.
  8. If making your own whipped cream, chill a mixing bowl and beaters in the freezer for about 10 minutes.
  9. In the chilled bowl, pour in 1 cup of heavy cream. Add powdered sugar and vanilla extract if desired.
  10. Beat the cream on medium-high speed until soft peaks form, being careful not to overbeat.
  11. Cover the whipped cream and place it in the refrigerator until ready to assemble the pie.
  12. After the pie has frozen for at least 4 hours, remove it from the freezer and take off the plastic wrap.
  13. Spread the whipped cream evenly over the top of the strawberry ice cream layer, creating swirls or peaks if desired.
  14. Drizzle chocolate syrup or strawberry sauce over the whipped cream for decoration.
  15. Garnish with whole strawberries on top for an extra touch.
  16. Cover the pie again with plastic wrap and return it to the freezer for at least 1 hour to firm up the whipped cream.

Notes

  • For a sweeter whipped cream, adjust the amount of powdered sugar to taste.
  • Feel free to substitute other fruits or sauces for a different flavor profile.
  • This pie can be made a day in advance and stored in the freezer until ready to serve.
