Refreshing and creamy Strawberry Coconut Refresher, perfect for a hot day! Vegan-friendly and easily customizable.

- 1 cup frozen strawberries
- 1/2 cup unsweetened shredded coconut
- 1/2 cup coconut cream (full-fat, refrigerated overnight)
- 1/4 cup coconut water (plus more to adjust consistency)
- 2 tablespoons lime juice (freshly squeezed is best!)
- 1 tablespoon agave nectar or maple syrup (adjust to taste)
- 1/4 teaspoon vanilla extract
- Pinch of sea salt
- Ice cubes (optional, for extra chill)
- Fresh strawberries and coconut flakes, for garnish (optional)
Instructions
- Combine Ingredients: In a high-speed blender, add the frozen strawberries, shredded coconut, coconut cream, coconut water, lime juice, agave nectar (or maple syrup), vanilla extract, and sea salt.
- Blend: Blend on high speed until completely smooth and creamy. Stop and scrape down the sides if needed.
- Check Consistency: Pour into a glass. If too thick, add more coconut water, 1 tablespoon at a time, until desired consistency is reached.
- Taste and Adjust: Taste and adjust sweetness with more agave/maple syrup, or tanginess with more lime juice, as needed.
- Add Ice (Optional): If desired, add ice cubes and blend again until smooth.
- Serve: Pour into glasses and garnish with fresh strawberries and coconut flakes, if desired. Serve immediately.
Notes
- For best results, use a high-speed blender.
- Adjust sweetness and tanginess to your personal preference.
- If using fresh strawberries, add a few ice cubes for an icy texture.
- Feel free to experiment with other fruits like raspberries or mangoes.
- For a thicker refresher, use more frozen strawberries or add chia seeds.
- For a thinner refresher, use more coconut water.
- You can prepare the base ahead of time and store it in the refrigerator for up to 24 hours.
- For an adult version, add a shot of rum or vodka.
- Adjust sweetness based on the sweetness of the strawberries.
- Strain for Extra Smoothness: If you prefer an ultra-smooth refresher, you can strain the mixture through a fine-mesh sieve after blending. This will remove any small pieces of coconut or strawberry seeds.
