  • 2 medium-sized bitter melons
  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce

  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

Instructions

  1. Wash the bitter melons thoroughly under running water.
  2. Cut the bitter melons in half lengthwise and scoop out the seeds and white pith.
  3. Slice the bitter melons into thin half-moon shapes, about 1/4 inch thick.
  4. Sprinkle the sliced bitter melon with a little salt and let it sit for 10-15 minutes. Rinse under cold water and pat dry.
  5. Crack the eggs into a mixing bowl.
  6. Add soy sauce, salt, and black pepper to the eggs.
  7. Whisk until the yolks and whites are fully combined and slightly frothy.
  8. Heat vegetable oil in a large skillet or wok over medium-high heat.
  9. Add minced garlic and sliced onion, sauté for 1-2 minutes until the onion is translucent and garlic is fragrant.
  10. Add sliced bitter melon and stir-fry for 5-7 minutes until tender but still crunchy.
  11. If using, drizzle oyster sauce over the bitter melon and stir to combine.
  12. Push the bitter melon mixture to one side of the skillet and pour the egg mixture into the empty side.
  13. Allow the eggs to sit for a few seconds until they start to set around the edges, then gently stir and mix with the bitter melon.
  14. Cook until the eggs are fully set but still soft and fluffy, about 2-3 minutes.
  15. Drizzle sesame oil over the dish.
  16. Stir the mixture to combine all ingredients.
  17. Taste and adjust seasoning if necessary.
  18. Transfer to a serving plate and garnish with fresh cilantro or sliced green onions.
