- 2 medium-sized bitter melons
- 4 large eggs
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce

- 1 small onion, thinly sliced
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil

Instructions
- Wash the bitter melons thoroughly under running water.
- Cut the bitter melons in half lengthwise and scoop out the seeds and white pith.
- Slice the bitter melons into thin half-moon shapes, about 1/4 inch thick.
- Sprinkle the sliced bitter melon with a little salt and let it sit for 10-15 minutes. Rinse under cold water and pat dry.
- Crack the eggs into a mixing bowl.
- Add soy sauce, salt, and black pepper to the eggs.
- Whisk until the yolks and whites are fully combined and slightly frothy.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and sliced onion, sauté for 1-2 minutes until the onion is translucent and garlic is fragrant.
- Add sliced bitter melon and stir-fry for 5-7 minutes until tender but still crunchy.
- If using, drizzle oyster sauce over the bitter melon and stir to combine.
- Push the bitter melon mixture to one side of the skillet and pour the egg mixture into the empty side.
- Allow the eggs to sit for a few seconds until they start to set around the edges, then gently stir and mix with the bitter melon.
- Cook until the eggs are fully set but still soft and fluffy, about 2-3 minutes.
- Drizzle sesame oil over the dish.
- Stir the mixture to combine all ingredients.
- Taste and adjust seasoning if necessary.
- Transfer to a serving plate and garnish with fresh cilantro or sliced green onions.
