  • 12 ounces (340g) sharp cheddar cheese, freshly shredded
  • 4 ounces (115g) Gruyere cheese or Fontina cheese, freshly shredded
  • 4 ounces (115g) cream cheese, softened and cut into small cubes
  • 2 tablespoons hot sauce (optional)
  • Butter or non-stick cooking spray (for greasing muffin tins)
  • Freshly chopped chives or parsley (optional, for garnish)

Instructions

  1. Step 1
    Crush both 8.5 oz bags of Cheetos Flamin’ Hot Crunchy Snacks into fine crumbs (approx. 5-6 cups total). Reserve 1 cup of crushed Cheetos for topping; the rest will be incorporated into the mac and cheese mixture.

    Cook 1 lb macaroni in a large pot of salted boiling water with 1 tbsp olive oil until slightly less than al dente (1-2 minutes shy of package directions). Drain immediately; do not rinse. Transfer to a large mixing bowl.

    In a large, heavy-bottomed saucepan, melt 6 tbsp unsalted butter over medium heat. Whisk in 6 tbsp all-purpose flour and cook for 1-2 minutes, stirring constantly, until a pale golden, nutty-smelling roux forms.

    Gradually whisk in 4 cups warmed whole milk, then 1/2 cup heavy cream. Continue to whisk over medium heat, bringing the mixture to a gentle simmer, until it thickens sufficiently to coat the back of a spoon (5-8 minutes).

    Remove the saucepan from the heat. Whisk in 1 tsp dry mustard powder, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder, and optional 1/4 tsp cayenne pepper. Add 12 oz freshly shredded sharp cheddar and 4 oz freshly shredded Gruyere/Fontina in small batches, whisking until each addition is melted and smooth. Finally, add 4 oz softened cream cheese cubes and whisk vigorously until fully melted and incorporated, creating an incredibly smooth sauce. Stir in optional 2 tbsp hot sauce. Taste and season with salt and freshly ground black pepper.

    Preheat oven to 375°F (190°C). Pour the entire cheese sauce over the drained macaroni in the large mixing bowl. Add about 4 cups of the crushed Flamin’ Hot Cheetos (the portion not reserved for topping). Mix thoroughly with a large spatula until the macaroni, cheese sauce, and crushed Cheetos are evenly combined.

    Generously grease a standard 12-cup muffin tin with butter or non-stick cooking spray.

    Fill each muffin cup generously with the mac and cheese mixture, pressing down gently to ensure they are packed and hold their shape. Sprinkle the reserved 1 cup of crushed Flamin’ Hot Cheetos over the top of each muffin for a crispy topping.
