Instructions

  1. Start by boiling a large pot of water. Once it reaches a rolling boil, add the rice noodles. Cook according to the package instructions, usually around 4-6 minutes, until they are al dente.
  2. Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. This also helps to prevent them from sticking together.
  3. Set the noodles aside in a bowl, and drizzle a little sesame oil over them to keep them from sticking. Toss gently to coat.
  4. While the noodles are cooking, take your thinly sliced beef sirloin and place it in a bowl.
  5. Add 1 tablespoon of soy sauce, a pinch of salt, and pepper to the beef. Mix well to ensure all the pieces are coated. Let it marinate for about 15-20 minutes. This step is crucial as it enhances the flavor of the beef.
  6. While the beef is marinating, prepare your vegetables. Slice the onion, bell pepper, and carrot, and cut the broccoli into small florets. Make sure everything is ready to go, as stir-frying is a quick process.
  7. Chop the green onions, separating the white parts from the green tops. We’ll use the white parts for cooking and the green tops for garnish.
  8. In a large wok or a deep skillet, heat 2 tablespoons of vegetable oil over medium-high heat. You want the oil to be hot but not smoking.
  9. Once the oil is hot, add the marinated beef in a single layer. Let it sear for about 2-3 minutes without stirring. This helps to develop a nice crust on the beef.
  10. After 2-3 minutes, stir the beef to cook it evenly. Cook for an additional 2-3 minutes until the beef is browned and cooked through. Remove the beef from the pan and set it aside on a plate.
  11. In the same wok, add a little more oil if necessary. Add the sliced onion and the white parts of the green onions. Stir-fry for about 1-2 minutes until they start to soften.
  12. Next, add the bell pepper, broccoli, and carrot. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp. You want them to retain some crunch for texture.
  13. During the last minute of cooking the vegetables, add the minced garlic and stir well to combine. Be careful not to burn the garlic, as it can turn bitter.
  14. Once the vegetables are cooked, return the beef to the wok. Stir everything together to combine.
  15. Add the cooked rice noodles to the wok. Gently toss everything together, ensuring the noodles are well mixed with the beef and vegetables.
