Description

A fun twist on s’mores! Marshmallow “rice” wrapped in fruit leather, filled with chocolate ganache and graham cracker crumbs.


Ingredients

  • 1/4 cup Powdered Sugar
  • 1/4 cup Cream Cheese, softened
  • 1 teaspoon Vanilla Extract
  • 6 sheets Fruit Leather (approximately 8x6 inches each), preferably chocolate or dark berry flavor
  • 1 cup Milk Chocolate Chips, melted
  • 1/2 cup Heavy Cream
  • 1 cup Graham Cracker Crumbs (about 7 full graham crackers)
  • 1/4 cup Mini Marshmallows (optional, for extra gooeyness)
  • Chocolate Syrup
  • Sprinkles
  • Powdered Sugar
  • Extra Graham Cracker Crumbs

Instructions

  1. Prepare the Marshmallow “Rice”: In a large bowl, combine marshmallow cream, powdered sugar, softened cream cheese, and vanilla extract. Beat with an electric mixer until smooth. Cover and chill for at least 30 minutes.
  2. Make the Chocolate Ganache Filling: Heat heavy cream in a saucepan until simmering. Pour over chocolate chips in a heatproof bowl. Let sit for 1 minute, then stir until smooth. Stir in graham cracker crumbs and mini marshmallows (if using). Cover and chill for 15-20 minutes, or until slightly thickened.
  3. Assemble the S’mores Sushi Rolls: Lay a sheet of fruit leather on parchment paper. Spread a thin layer of chilled marshmallow mixture over the fruit leather, leaving a 1/2-inch space on one edge. Spoon a line of chocolate ganache filling down the center.
  4. Carefully roll up the fruit leather tightly over the filling, using the parchment paper to guide you. Moisten the empty edge of the fruit leather with a little water to seal the roll.
  5. Wrap the finished sushi roll tightly in plastic wrap and refrigerate for at least 30 minutes to allow it to set completely.
  6. Repeat steps 2-7 with the remaining fruit leather, marshmallow mixture, and chocolate filling.
  7. Slice and Serve: Unwrap the chilled sushi rolls. Trim the ends and slice each roll into 1-inch thick pieces. Arrange on a plate. Garnish with chocolate syrup, sprinkles, powdered sugar, or extra graham cracker crumbs (optional). Serve immediately.
