- 6 ears fresh corn, shucked
- 4 tablespoons butter, unsalted
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh basil
- 1 small shallot, finely minced
- 1 clove garlic, finely minced
- 1/2 teaspoon sugar
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup crumbled cooked bacon
- Optional: Pinch of red pepper flakes
Instructions
- Prepare the Corn: Husk the corn, removing all silks. Rinse under cold water. Stand each ear upright on a cutting board (using a bundt pan or bowl for stability). Slice down the sides to remove kernels. Scrape the cob with the back of your knife to release the “milk.” Repeat with all ears.
- Melt Butter and Sauté Aromatics: In a large skillet (cast iron preferred), melt butter over medium heat. Add minced shallot and garlic; sauté for 2-3 minutes until softened and fragrant (do not brown).
- Cook the Corn: Add corn kernels to the skillet, stirring to coat with butter and aromatics. Cook, stirring occasionally, for 8-10 minutes, until tender and slightly browned. Reduce heat if corn starts to stick.
- Add Cream and Milk: Pour in heavy cream and milk. Stir well to combine.
- Simmer: Bring to a simmer, then reduce heat to low. Simmer for 5-7 minutes, until the sauce has thickened slightly, stirring occasionally.
- Season: Stir in sugar, salt, and pepper. Taste and adjust seasoning as needed. Add red pepper flakes, if using.
- Add Herbs: Remove from heat and stir in chopped chives and basil.
- Serve: Garnish with crumbled bacon (optional). Serve immediately while hot and creamy.
Notes
- For a smoky flavor, grill the corn on the cob before cutting off the kernels.
- Add some grated Parmesan or Gruyere cheese for a richer flavor.
- Use plant-based butter and cream alternatives to make it vegan.
- Sauté some diced bell peppers or onions along with the shallots and garlic.
- You can prepare the corn up to a day in advance and reheat it gently before serving.
