  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Season with a pinch of salt and pepper.
  2. Prepare the vegetables: wash and trim the asparagus, slice the red bell pepper, and rinse the snap peas. Mince the garlic and ginger.
  3. In a small bowl, mix soy sauce, oyster sauce (if using), cornstarch, and water. Whisk until the cornstarch is dissolved.
  4. Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat the pan.
  5. Add minced garlic and ginger to the pan, stir-frying for about 30 seconds until fragrant.
  6. Add the shrimp in a single layer and cook for 2-3 minutes without stirring. Flip and cook for another 1-2 minutes until pink and opaque. Remove shrimp and set aside.
  7. In the same pan, add asparagus and red bell pepper. Stir-fry for 2-3 minutes until slightly softened.
  8. Add snap peas and stir-fry for another 2 minutes.
  9. Return the shrimp to the pan and pour the sauce mixture over everything. Stir to coat.
  10. Cook for an additional 1-2 minutes until the sauce thickens. Adjust seasoning with salt and pepper if needed.
  11. Remove from heat and serve over cooked rice or noodles. Garnish with sesame seeds and green onions if desired.
