This colorful Shrimp and Asparagus Stir Fry is a quick, healthy meal featuring tender shrimp and fresh vegetables in a savory sauce. Ideal for busy weeknights or impressing guests, it comes together in just 25 minutes and can be served over rice or noodles.

- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons vegetable oil (or any cooking oil of your choice)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup snap peas, trimmed
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Cooked rice or noodles, for serving
- Sesame seeds and green onions for garnish (optional)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels. Season with a pinch of salt and pepper.
- Prepare the vegetables: wash and trim the asparagus, slice the red bell pepper, and rinse the snap peas. Mince the garlic and ginger.
- In a small bowl, mix soy sauce, oyster sauce (if using), cornstarch, and water. Whisk until the cornstarch is dissolved.
- Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat the pan.
- Add minced garlic and ginger to the pan, stir-frying for about 30 seconds until fragrant.
- Add the shrimp in a single layer and cook for 2-3 minutes without stirring. Flip and cook for another 1-2 minutes until pink and opaque. Remove shrimp and set aside.
- In the same pan, add asparagus and red bell pepper. Stir-fry for 2-3 minutes until slightly softened.
- Add snap peas and stir-fry for another 2 minutes.
- Return the shrimp to the pan and pour the sauce mixture over everything. Stir to coat.
- Cook for an additional 1-2 minutes until the sauce thickens. Adjust seasoning with salt and pepper if needed.
- Remove from heat and serve over cooked rice or noodles. Garnish with sesame seeds and green onions if desired.
