  • 1 cup soy sauce
  • 1/2 cup dark soy sauce
  • 1/4 cup rice wine or sherry
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 green onions, chopped
  • 4 cups water
  • 8 ounces egg noodles or your choice of noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bok choy, chopped
  • 1 carrot, julienned
  • 1/4 cup green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Rinse the whole chicken under cold water and pat it dry with paper towels.
  2. In a large pot, combine soy sauce, dark soy sauce, rice wine, brown sugar, minced garlic, sliced ginger, star anise, cinnamon stick, and chopped green onions. Stir well.
  3. Add the chicken to the pot, ensuring it is fully submerged in the sauce mixture. Add more water if necessary.
  4. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours.
  5. Every 30 minutes, carefully turn the chicken to ensure even cooking and flavor absorption.
  6. Once cooked through and tender, remove the chicken from the pot and let it cool slightly. Reserve the braising liquid.
  7. Shred the chicken meat using two forks or your hands, discarding the skin and bones. Set aside.
  8. While the chicken is braising, bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente (about 4-6 minutes).
  9. Drain the noodles and rinse under cold water to stop the cooking process.
  10. In a large skillet or wok, heat vegetable oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  11. Add chopped bok choy and julienned carrot to the skillet. Stir-fry for 2-3 minutes until tender but still crisp.
  12. Add the cooked noodles to the skillet, tossing to combine. Pour in about 1/2 cup of the reserved braising liquid and stir well to coat the noodles.
  13. Continue to stir-fry for another 2-3 minutes until heated through. Add more braising liquid if the noodles seem dry.
  14. Place a generous portion of stir-fried noodles on each plate.
  15. Top with a hearty serving of shredded braised soy chicken, drizzling some braising sauce over the chicken.
  16. Garnish with chopped green onions and a sprinkle of sesame seeds.
  17. For an extra kick, add a dash of chili oil or fresh chili slices if desired.
