  • Author: Maria
  • Total Time: 140 minutes
  • Yield: 4-6 servings 1x

Description

This slow-cooked round steak is tender and packed with flavor, simmered in a rich sauce of beef broth, tomatoes, and herbs. Ideal for family meals or special occasions, it pairs perfectly with mashed potatoes, rice, or pasta. Enjoy a comforting dish that deepens in flavor when made ahead!

Ingredients

Scale
  • 2 pounds round steak
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Trim any excess fat from the round steak using a sharp knife. Cut the steak into bite-sized pieces and season generously with salt and pepper.
  2. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the seasoned steak pieces in a single layer and sear for 3-4 minutes on each side until browned. Remove the steak and set aside.
  3. In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.
  4. Pour in beef broth, diced tomatoes, Worcestershire sauce, soy sauce, and balsamic vinegar. Stir to combine.
  5. Add dried thyme and oregano, then return the browned steak to the skillet, ensuring it is submerged in the sauce. Bring to a gentle simmer.
  6. Reduce heat to low, cover, and let cook for 1.5 to 2 hours, checking every 30 minutes. Add more broth or water if the sauce thickens too much.
  7. After 1.5 to 2 hours, check the steak for tenderness. If not fork-tender, continue cooking for another 15-30 minutes.
  8. Taste the sauce and adjust seasoning if necessary. For a thicker sauce, remove the lid and simmer for an additional 10-15 minutes.
  9. Serve the round steak and sauce over mashed potatoes, rice, or pasta. Garnish with freshly chopped parsley.

Notes

  • This dish can be made ahead of time and reheated. The flavors deepen as it sits.
  • For a spicier kick, consider adding red pepper flakes to the sauce.
