Ingredients
Scale
- 2 pounds round steak
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup diced tomatoes (canned or fresh)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Trim any excess fat from the round steak using a sharp knife. Cut the steak into bite-sized pieces and season generously with salt and pepper.
- In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the seasoned steak pieces in a single layer and sear for 3-4 minutes on each side until browned. Remove the steak and set aside.
- In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.
- Pour in beef broth, diced tomatoes, Worcestershire sauce, soy sauce, and balsamic vinegar. Stir to combine.
- Add dried thyme and oregano, then return the browned steak to the skillet, ensuring it is submerged in the sauce. Bring to a gentle simmer.
- Reduce heat to low, cover, and let cook for 1.5 to 2 hours, checking every 30 minutes. Add more broth or water if the sauce thickens too much.
- After 1.5 to 2 hours, check the steak for tenderness. If not fork-tender, continue cooking for another 15-30 minutes.
- Taste the sauce and adjust seasoning if necessary. For a thicker sauce, remove the lid and simmer for an additional 10-15 minutes.
- Serve the round steak and sauce over mashed potatoes, rice, or pasta. Garnish with freshly chopped parsley.
Notes
- This dish can be made ahead of time and reheated. The flavors deepen as it sits.
- For a spicier kick, consider adding red pepper flakes to the sauce.
