- 4 slices of sourdough bread
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2–3 fresh jalapeños, roasted and chopped
- 2 tablespoons mayonnaise
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with aluminum foil. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
- Remove jalapeños from the oven and let cool for 10 minutes. Peel off the charred skin, being careful not to touch your face.
- Slice jalapeños in half lengthwise, remove seeds for milder flavor, and chop into small pieces. Set aside.
- In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and shredded mozzarella.
- Fold in the chopped roasted jalapeños into the cheese mixture until evenly distributed.
- Add garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined and adjust seasoning to taste.
- Spread a thin layer of mayonnaise on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, generously spread the cheese and jalapeño mixture.
- Place the other two slices of bread on top, mayonnaise side up, forming two sandwiches.
- In a large skillet or griddle, heat over medium heat.
- Place the sandwiches in the skillet and cook for 4-5 minutes until golden brown and crispy.
- Gently flip the sandwiches and cook for another 4-5 minutes on the other side.
- Press down gently with a spatula and cover the skillet with a lid for a minute to help the cheese melt.
- Once both sides are golden and cheese is melted, remove from skillet and let cool for a minute before slicing.
Notes
- For a milder sandwich, remove all seeds from the jalapeños.
- You can substitute mayonnaise with butter if preferred, but mayonnaise gives a unique flavor and texture.
- Feel free to add more spices or herbs to the cheese mixture for extra flavor.
