  • 4 slices of sourdough bread
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 23 fresh jalapeños, roasted and chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with aluminum foil. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
  2. Remove jalapeños from the oven and let cool for 10 minutes. Peel off the charred skin, being careful not to touch your face.
  3. Slice jalapeños in half lengthwise, remove seeds for milder flavor, and chop into small pieces. Set aside.
  4. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and shredded mozzarella.
  5. Fold in the chopped roasted jalapeños into the cheese mixture until evenly distributed.
  6. Add garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined and adjust seasoning to taste.
  7. Spread a thin layer of mayonnaise on one side of each slice of sourdough bread.
  8. On the unbuttered side of two slices, generously spread the cheese and jalapeño mixture.
  9. Place the other two slices of bread on top, mayonnaise side up, forming two sandwiches.
  10. In a large skillet or griddle, heat over medium heat.
  11. Place the sandwiches in the skillet and cook for 4-5 minutes until golden brown and crispy.
  12. Gently flip the sandwiches and cook for another 4-5 minutes on the other side.
  13. Press down gently with a spatula and cover the skillet with a lid for a minute to help the cheese melt.
  14. Once both sides are golden and cheese is melted, remove from skillet and let cool for a minute before slicing.

Notes

  • For a milder sandwich, remove all seeds from the jalapeños.
  • You can substitute mayonnaise with butter if preferred, but mayonnaise gives a unique flavor and texture.
  • Feel free to add more spices or herbs to the cheese mixture for extra flavor.
