Beat the heat with these refreshing Poolside Popsicle Spritzers! Made with fresh fruit juice, sparkling water, and colorful fruit popsicles, this delightful drink is perfect for summer gatherings or relaxing by the pool. Enjoy a fizzy, fruity treat that’s easy to customize for everyone!

Ingredients

Scale
  • 2 cups of fresh fruit juice (orange, pineapple, or a mix)
  • 1 cup of sparkling water or club soda
  • 1 cup of fresh fruit (berries, citrus slices, or diced tropical fruits)
  • 1/4 cup of simple syrup (adjust to taste)
  • Fresh mint leaves for garnish
  • Popsicle molds
  • Ice cubes (optional)

Instructions

  1. Choose Your Fruit Juice: Select your favorite fruit juice. A combination of orange and pineapple works great, but feel free to experiment.
  2. Make the Simple Syrup: In a small saucepan, combine 1/4 cup sugar and 1/4 cup water. Heat over medium heat, stirring until the sugar dissolves. Let it cool.
  3. Prepare the Fresh Fruit: Wash and chop your fresh fruit into small pieces. A mix of strawberries, blueberries, and diced mango is recommended.
  4. Mix the Juice and Simple Syrup: In a large bowl, combine the fresh fruit juice with the cooled simple syrup. Stir well and adjust sweetness if needed.
  5. Fill the Popsicle Molds: Pour the juice mixture into the molds, filling them about three-quarters full.
  6. Add Fresh Fruit: Drop a few pieces of prepared fresh fruit into each mold.
  7. Insert Sticks and Freeze: Place popsicle sticks into the molds and freeze for at least 4-6 hours, or until solid.
  8. Gather Your Ingredients: Once the popsicles are frozen, gather sparkling water, additional fresh fruit, and mint leaves.
  9. Mix the Spritzer Base: In a pitcher, combine the remaining fresh fruit juice with the sparkling water, adjusting the ratio to your preference.
  10. Taste and Adjust: Taste the mixture and add simple syrup or more sparkling water as needed.
  11. Prepare Your Glasses: Use fun glasses or mason jars, adding ice cubes if desired.
  12. Add the Popsicle: Remove popsicles from molds (run warm water over molds if needed) and place one in each glass.
  13. Pour the Spritzer: Slowly pour the spritzer mixture over the popsicle in each glass.
  14. Garnish: Top with fresh fruit pieces and a sprig of mint.
  15. Serve and Enjoy: Serve immediately while cold and fizzy.

Notes

  • Customization: Feel free to mix different fruit juices and fresh fruits. For an adult version, add a splash of vodka or rum to the spritzer.
  • Mocktail Option: This recipe can easily be made alcohol-free for kids or non-drinkers.
