  • 4 cups cold water
  • 1 cup sparkling water (optional, for fizz)
  • Ice cubes
  • Fresh mint leaves (for garnish)

Instructions

  1. Rinse the fresh raspberries under cold water and gently pat them dry. In a blender, blend the raspberries on high speed until smooth (about 30 seconds to 1 minute). Pour the puree through a fine mesh strainer into a bowl or pitcher, pressing with a spatula to extract as much liquid as possible. Set aside to yield about 1 cup of raspberry juice.
  2. In a separate bowl or pitcher, combine the freshly squeezed lemon juice and granulated sugar. Stir until the sugar is completely dissolved, which may take a few minutes. Add the raspberry puree to the lemon juice mixture and stir until well combined.
  3. Pour in 4 cups of cold water to the raspberry-lemon mixture and stir gently. Taste and adjust sweetness by adding more sugar if desired. If you want fizz, gently stir in the sparkling water.
  4. Cover the pitcher and refrigerate for at least 30 minutes to chill. When ready to serve, fill glasses with ice cubes and pour the pink raspberry lemonade over the ice, filling each glass about three-quarters full. Garnish with fresh raspberries and a sprig of mint.
  5. Admire your creation and enjoy the refreshing taste. Store any leftovers in the refrigerator for up to 3 days, stirring before serving.
