- 1/4 cup cocoa powder (for rolling, optional)
Instructions
- In a medium mixing bowl, add 1 cup of creamy peanut butter.
- Add 1 cup of powdered sugar.
- Pour in 1 teaspoon of vanilla extract.
- Mix all ingredients together until well combined, achieving a thick, dough-like consistency.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 2 tablespoons of coconut oil.
- Microwave in 30-second intervals, stirring in between, until melted and smooth (about 1 to 1.5 minutes).
- Let the melted chocolate cool slightly.
- Remove the peanut butter mixture from the refrigerator.
- Scoop out about 1 tablespoon of the mixture and roll it into a ball. Place it on a parchment-lined baking sheet.
- Repeat until all the mixture is rolled into balls (about 20-24 truffles).
- Refrigerate the rolled balls for 10-15 minutes to firm up.
- Dip each chilled peanut butter ball into the melted chocolate using a fork, ensuring its fully coated.
- Tap the fork on the bowl’s edge to remove excess chocolate.
- Place the coated truffle back on the parchment-lined baking sheet.
- Optionally, sprinkle crushed peanuts or roll in cocoa powder before the chocolate sets.
- Repeat until all truffles are coated.
- Refrigerate the baking sheet for about 30 minutes to allow the chocolate to harden.
- Once set, transfer the truffles to an airtight container. They can be stored in the refrigerator for up to two weeks.
