  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil (or vegetable oil)
  • 1/4 cup crushed peanuts (for garnish, optional)
  • 1/4 cup cocoa powder (for rolling, optional)

Instructions

  1. In a medium mixing bowl, add 1 cup of creamy peanut butter.
  2. Add 1 cup of powdered sugar.
  3. Pour in 1 teaspoon of vanilla extract.
  4. Mix all ingredients together until well combined, achieving a thick, dough-like consistency.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  6. In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 2 tablespoons of coconut oil.
  7. Microwave in 30-second intervals, stirring in between, until melted and smooth (about 1 to 1.5 minutes).
  8. Let the melted chocolate cool slightly.
  9. Remove the peanut butter mixture from the refrigerator.
  10. Scoop out about 1 tablespoon of the mixture and roll it into a ball. Place it on a parchment-lined baking sheet.
  11. Repeat until all the mixture is rolled into balls (about 20-24 truffles).
  12. Refrigerate the rolled balls for 10-15 minutes to firm up.
  13. Dip each chilled peanut butter ball into the melted chocolate using a fork, ensuring it’s fully coated.
  14. Tap the fork on the bowl’s edge to remove excess chocolate.
  15. Place the coated truffle back on the parchment-lined baking sheet.
  16. Optionally, sprinkle crushed peanuts or roll in cocoa powder before the chocolate sets.
  17. Repeat until all truffles are coated.
  18. Refrigerate the baking sheet for about 30 minutes to allow the chocolate to harden.
  19. Once set, transfer the truffles to an airtight container. They can be stored in the refrigerator for up to two weeks.
