  • 1/4 cup of chopped green onions (for garnish)
  • 1 cup of sour cream (for dipping)
  • 1 tablespoon of hot sauce (optional, for dipping)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and paprika. Whisk until well mixed.
  2. In a separate bowl, whisk together the milk, vegetable oil, and egg until fully combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon. Do not overmix; a few lumps are okay.
  4. If using bacon, fold in the cooked and crumbled bacon.
  5. Fold in the shredded cheddar cheese until evenly distributed.
  6. Preheat your oven to 400°F (200°C).
  7. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  8. Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each scoop.
  9. Gently press down on each scoop to flatten slightly.
  10. Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  11. Remove from the oven and let cool for a few minutes before transferring to a wire rack.
