Ingredients
Scale
- 1 pound breakfast sausage
- 12 large eggs
- 2 cups milk
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup melted butter
- 1 cup shredded cheddar cheese (optional)
- Maple syrup, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the breakfast sausage. Break it up into smaller pieces as it cooks.
- Cook the sausage for about 8-10 minutes, or until browned and fully cooked. Stir occasionally to prevent sticking.
- Drain any excess grease from the skillet and set the cooked sausage aside in a bowl.
- In a large mixing bowl, crack the eggs and whisk until well combined and frothy.
- Add the milk to the eggs and whisk until smooth.
- In a separate bowl, combine the flour, sugar, baking powder, and salt. Mix until evenly distributed.
- Gradually add the dry mixture to the wet mixture, whisking continuously to avoid lumps.
- Stir in the vanilla extract and melted butter until the batter is smooth.
- If using cheese, fold in the shredded cheddar cheese.
- Grease a 9×13 inch baking dish with cooking spray or butter.
- Spread the cooked sausage evenly across the bottom of the dish.
- Pour the pancake batter over the sausage, covering it completely.
- Optionally, sprinkle extra cheese on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool for 5-10 minutes before cutting.
- Cut into squares and serve warm, drizzled with maple syrup.
- Enhance with fresh fruit, whipped cream, or powdered sugar if desired.
- Perfect for brunch, breakfast-for-dinner, or as a make-ahead meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
