It’s easy to prepare, can be customized with cheese or veggies, and is delicious when served warm with maple syrup or your favorite toppings. Perfect for feeding a crowd!

Ingredients

Scale
  • 1 pound breakfast sausage
  • 12 large eggs
  • 2 cups milk
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional)
  • Maple syrup, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Break it up into smaller pieces as it cooks.
  3. Cook the sausage for about 8-10 minutes, or until browned and fully cooked. Stir occasionally to prevent sticking.
  4. Drain any excess grease from the skillet and set the cooked sausage aside in a bowl.
  5. In a large mixing bowl, crack the eggs and whisk until well combined and frothy.
  6. Add the milk to the eggs and whisk until smooth.
  7. In a separate bowl, combine the flour, sugar, baking powder, and salt. Mix until evenly distributed.
  8. Gradually add the dry mixture to the wet mixture, whisking continuously to avoid lumps.
  9. Stir in the vanilla extract and melted butter until the batter is smooth.
  10. If using cheese, fold in the shredded cheddar cheese.
  11. Grease a 9×13 inch baking dish with cooking spray or butter.
  12. Spread the cooked sausage evenly across the bottom of the dish.
  13. Pour the pancake batter over the sausage, covering it completely.
  14. Optionally, sprinkle extra cheese on top.
  15. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  16. Remove from the oven and let cool for 5-10 minutes before cutting.
  17. Cut into squares and serve warm, drizzled with maple syrup.
  18. Enhance with fresh fruit, whipped cream, or powdered sugar if desired.
  19. Perfect for brunch, breakfast-for-dinner, or as a make-ahead meal.
  20. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
