Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in the rolled oats, raisins, and chopped nuts (if using) with a spatula.
  7. Prepare a 9×13 inch baking dish by lining it with parchment paper, leaving some overhang, and lightly greasing it with cooking spray or butter.
