Instructions
- Melt the Chocolate: Place the semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until melted and smooth (about 1 to 1.5 minutes). Be careful not to overheat.
- Cool the Chocolate: Set the melted chocolate aside to cool slightly.
- Whip the Egg Yolks: In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy (2-3 minutes).
- Add the Chocolate: Slowly pour in the melted chocolate while whisking continuously. Add vanilla extract and salt, mixing until combined.
- Whip the Egg Whites: In a clean bowl, beat the egg whites until soft peaks form (3-4 minutes). Gradually add powdered sugar and continue beating until stiff peaks form.
- Fold in the Egg Whites: Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate them.
- Whip the Cream: In a large bowl, beat the heavy whipping cream on medium-high speed until soft peaks form (3-5 minutes).
- Combine with Chocolate Mixture: Gently fold the whipped cream into the chocolate mixture in two additions.
- Assemble the Dessert: Spoon the mousse into serving dishes, layering if desired.
- Chill the Mousse: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Garnish: Before serving, add chocolate shavings or cocoa powder on top for garnish.
