  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, zested and juiced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup capers, rinsed and drained

Instructions

  1. In a small bowl, combine the olive oil, salt, black pepper, garlic powder, oregano, thyme, lemon zest, and lemon juice. Whisk until well blended.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated. Marinate in the refrigerator for at least 30 minutes.
  3. Wash and halve the cherry tomatoes. Set aside in a mixing bowl.
  4. Slice the Kalamata olives in half and add to the bowl with the tomatoes.
  5. Thinly slice the red onion and add it to the bowl.
  6. Chop the fresh parsley and set aside for garnishing.
  7. Rinse and drain the capers, adding them to the vegetable mixture.
  8. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  9. Place the marinated salmon fillets skin-side down in the pan. Cook for 4-5 minutes until the skin is crispy and golden brown.
  10. Flip the salmon fillets and cook for an additional 3-4 minutes until opaque and flaky. Remove from skillet and cover loosely with aluminum foil.
  11. In the same skillet, add the cherry tomatoes, Kalamata olives, and red onion. Add more olive oil if needed.
  12. Sauté for 5-7 minutes until the tomatoes soften and release their juices.
  13. Add the capers and stir to combine, cooking for an additional 1-2 minutes.
  14. Place the cooked salmon fillets on a large serving platter.
  15. Add the sautéed vegetable mixture around the salmon.
  16. Sprinkle with crumbled feta cheese and chopped parsley.
  17. Serve immediately, garnished with lemon wedges if desired.
