  • 1 cup fresh spinach, chopped
  • 1 cup cooked meat (such as sausage, ham, or bacon), diced
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, diced (any color you prefer)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup milk
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Optional: herbs like parsley or basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the spinach, finely chop the onion, and dice the bell pepper.
  3. Dice leftover cooked meat or sauté fresh meat in a pan until fully cooked, then set aside.
  4. In a large mixing bowl, crack the eggs and add the milk. Whisk until well combined and slightly frothy.
  5. Add salt and pepper to taste (about 1/2 teaspoon salt and a pinch of pepper is a good start).
  6. In a large oven-safe skillet, heat olive oil or butter over medium heat. Add the onions and bell peppers, sautéing for 5-7 minutes until soft and translucent.
  7. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
  8. Add the diced cooked meat to the skillet and stir for 1-2 minutes to meld the flavors.
  9. Pour the whisked egg mixture over the sautéed vegetables and meat, gently stirring to distribute.
  10. Evenly sprinkle the shredded cheese on top of the egg mixture.
  11. Cook on the stovetop for about 5 minutes over medium-low heat to set the bottom.
  12. Carefully transfer the skillet to the preheated oven and bake for 15-20 minutes until set in the center and lightly golden on top.
  13. Remove from the oven and let cool for about 5 minutes.
  14. Optionally, sprinkle fresh herbs like parsley or basil on top.
  15. Slice into wedges and serve warm or at room temperature.
