- 6 large eggs
- 1 cup fresh spinach, chopped
- 1 cup cooked meat (such as sausage, ham, or bacon), diced
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, diced (any color you prefer)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/4 cup milk
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Optional: herbs like parsley or basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Chop the spinach, finely chop the onion, and dice the bell pepper.
- Dice leftover cooked meat or sauté fresh meat in a pan until fully cooked, then set aside.
- In a large mixing bowl, crack the eggs and add the milk. Whisk until well combined and slightly frothy.
- Add salt and pepper to taste (about 1/2 teaspoon salt and a pinch of pepper is a good start).
- In a large oven-safe skillet, heat olive oil or butter over medium heat. Add the onions and bell peppers, sautéing for 5-7 minutes until soft and translucent.
- Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
- Add the diced cooked meat to the skillet and stir for 1-2 minutes to meld the flavors.
- Pour the whisked egg mixture over the sautéed vegetables and meat, gently stirring to distribute.
- Evenly sprinkle the shredded cheese on top of the egg mixture.
- Cook on the stovetop for about 5 minutes over medium-low heat to set the bottom.
- Carefully transfer the skillet to the preheated oven and bake for 15-20 minutes until set in the center and lightly golden on top.
- Remove from the oven and let cool for about 5 minutes.
- Optionally, sprinkle fresh herbs like parsley or basil on top.
- Slice into wedges and serve warm or at room temperature.
Notes
- This frittata is highly customizable; feel free to add other vegetables or spices according to your taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat individual slices in the microwave.
