- 4 large russet potatoes, peeled and cubed
- 1/2 cup unsalted butter, softened
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup green onions, chopped (for garnish)
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Start by washing and peeling the russet potatoes.
- Once peeled, cut the potatoes into even-sized cubes, about 1 to 2 inches.
- Place the cubed potatoes into a large pot and cover them with cold water. Add a generous pinch of salt to the water.
- Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.
- Once cooked, drain the potatoes in a colander and let them sit for a minute to allow excess moisture to evaporate.
- Transfer the drained potatoes back into the pot.
- Add the softened butter to the hot potatoes.
- Add the sour cream and milk.
- Sprinkle in the garlic powder, onion powder, and a good pinch of salt and pepper. Adjust the seasoning to your taste.
- Using a potato masher or a hand mixer, mash the potatoes until they reach your desired consistency.
- Once mashed, fold in the shredded cheddar cheese and grated Parmesan cheese.
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with a little butter or cooking spray.
- Transfer the cheesy mashed potato mixture into the prepared baking dish, spreading it out evenly with a spatula.
- If you like a crunchy topping, sprinkle the breadcrumbs evenly over the top of the mashed potatoes.
- For an extra touch, sprinkle a little more shredded cheddar cheese on top of the breadcrumbs.
- Once assembled, place the baking dish in the preheated oven. Bake for about 25-30 minutes, or until the top is golden brown and the edges are bubbling.
- Keep an eye on it during the last few minutes to ensure it doesnt over-brown.
- Once done, remove the casserole from the oven and let it cool for about 5-10 minutes.
- Before serving, sprinkle the chopped green onions over the top.
Notes
- Feel free to customize the cheese blend to your liking; mozzarella or gouda can also work well.
- For a spicier kick, consider adding some diced jalapeños or a dash of hot sauce to the potato mixture.
