  • 4 ripe mangoes, peeled and diced
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons fresh lime juice

Instructions

  1. Select ripe mangoes that are slightly soft and aromatic. Varieties like Haden or Ataulfo work best.
  2. Peel the mangoes carefully using a sharp knife or vegetable peeler.
  3. Cut the mangoes into chunks, slicing around the pit.
  4. Place the diced mangoes into a blender or food processor and blend until smooth. If too thick, add a tablespoon of water.
  5. Transfer the smooth mango puree to a bowl and set aside.
  6. In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar.
  7. Heat over medium heat, stirring until the sugar dissolves (about 3-5 minutes). Do not boil.
  8. Remove from heat and let the syrup cool to room temperature.
  9. In a large mixing bowl, combine the mango puree, cooled simple syrup, fresh lime juice, and a pinch of salt. Add vanilla extract if desired.
  10. Stir well until fully combined. Taste and adjust sweetness if necessary.
  11. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1-2 hours.
  12. Pour the chilled mango mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-30 minutes).
  13. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze. Every 30 minutes, scrape with a fork to break up ice crystals for about 3-4 hours.
  14. Once the sorbet is fluffy and firm, transfer it to an airtight container, smooth the top, and cover.
  15. Freeze for at least 4 hours. It can be stored in the freezer for up to 2 weeks.
  16. Before serving, let the sorbet sit at room temperature for 5-10 minutes for easier scooping.
  17. Serve in bowls or dessert glasses, garnished with fresh mint leaves, lime wedges, or a sprinkle of chili powder if desired.
