Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
  2. Add the linguine pasta and cook according to package instructions until al dente (8-10 minutes), stirring occasionally.
  3. Reserve about 1 cup of the pasta cooking water, then drain the linguine in a colander and set aside.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant but not browned.
  6. Pour in the dry white wine, bringing it to a simmer and cooking for 2-3 minutes to reduce slightly.
  7. Add the scrubbed clams to the skillet, covering with a lid to steam open.
  8. Cook for 5-7 minutes until the clams have opened, discarding any that remain closed.
  9. Stir in the chopped parsley, lemon zest, and lemon juice.
  10. Add the drained linguine to the skillet, tossing gently to combine and coat the pasta with the sauce.
  11. If the pasta seems dry, add reserved pasta cooking water gradually until desired consistency is reached (about 1/4 to 1/2 cup).
  12. Season with salt and pepper to taste.
  13. Plate the linguine and clams in shallow bowls.
  14. Optionally, sprinkle with freshly grated Parmesan cheese and garnish with additional parsley and a lemon wedge.
