Instructions

  1. Combine Water and Chia Seeds: In a glass or jar, pour the filtered water. Add the chia seeds to the water. Make sure the chia seeds are evenly distributed to prevent clumping.
  2. Stir Well: Use a spoon or fork to thoroughly stir the chia seeds into the water. This initial stirring is crucial to prevent the seeds from settling at the bottom and clumping together.
  3. Let the Mixture Sit and Hydrate: Allow the chia seeds to soak in the water for at least 15-20 minutes. During this time, the chia seeds will absorb the water and expand, forming a gel-like consistency. This process is what makes chia seed water so hydrating and beneficial. You’ll notice the mixture thickening as the chia seeds hydrate. For a thicker consistency, you can let it sit for up to an hour.
  4. Add Lemon Juice: Once the chia seeds have hydrated, add the freshly squeezed lemon juice to the mixture. The lemon juice not only adds a refreshing flavor but also provides a boost of vitamin C.
  5. Sweeten to Taste: Add your sweetener of choice. I prefer honey or maple syrup, but you can also use agave nectar, stevia, or any other sweetener you like. Start with 1 tablespoon and adjust to your preference. Remember, you can always add more, but you can’t take it away!
  6. Stir Again: Stir the mixture well to ensure that the lemon juice and sweetener are evenly distributed. You want everything to be nicely incorporated for the best flavor.
  7. Optional: Add a Pinch of Salt: A tiny pinch of sea salt can enhance the flavors of the lemon and sweetener. It might sound strange, but it really does make a difference! Just a very small pinch is all you need.
