  • 1 cup all-purpose flour

  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Wash the peaches thoroughly under cold water.
  2. Peel the peaches using a paring knife or by blanching them in boiling water for 30 seconds, then plunging them into ice water to cool before peeling.
  3. Slice the peeled peaches into thin wedges and place them in a large mixing bowl.
  4. Add 1 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1 tablespoon of lemon juice to the bowl with the peaches.
  5. Gently toss the peaches with the sugar mixture until well coated. Set aside to let the flavors meld.
  6. In a separate mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well mixed.
  7. In another bowl, mix together 1 cup of milk, 1/2 cup of melted unsalted butter, and 1 teaspoon of vanilla extract.
  8. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix.
  9. Preheat your oven to 350°F (175°C).
  10. Grease a 9×13-inch baking dish with butter or non-stick spray.
  11. Pour the batter into the greased baking dish, spreading it evenly across the bottom.
  12. Spoon the peach mixture over the batter without stirring; the peaches will sink as it bakes.
  13. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
