- 1 ½ cups of fresh key lime juice
- 1 cup of tequila
- ½ cup of orange liqueur
- ½ cup of simple syrup
- 1 cup of coconut cream
- 1 cup of ice cubes
- Graham cracker crumbs
- Key lime slices
- Fresh mint leaves
Instructions
- In a small saucepan, combine ½ cup of sugar and ½ cup of water. Heat over medium heat, stirring until the sugar dissolves (3-5 minutes). Remove from heat and let cool. Store any leftovers in an airtight container in the refrigerator for up to a month.
- Roll each key lime on the countertop to release the juice. Cut in half and use a citrus juicer to extract juice until you have 1 ½ cups. Strain through a fine mesh sieve to remove seeds and pulp.
- In a blender, combine the key lime juice, tequila, orange liqueur, simple syrup, coconut cream, and ice cubes. Blend on high speed until smooth and creamy (30-45 seconds). Adjust sweetness with more simple syrup if desired.
- Run a lime wedge around the rim of each glass. On a small plate, spread graham cracker crumbs and dip the rim of each glass into the crumbs, twisting gently for an even coating.
- Pour the margarita mixture into the rimmed glasses, filling about three-quarters full. Garnish with a slice of key lime and a sprig of fresh mint if desired.
- Serve immediately while cold. For gatherings, prepare a batch ahead of time and store in the refrigerator. Shake or stir before serving.
