Description
A refreshing tropical Key Lime Colada with frozen pineapple, mango, cream of coconut, fresh Key lime juice, and lime simple syrup. Add rum for an adult version!

- 1 ½ cups frozen pineapple chunks
- ½ cup frozen mango chunks
- ½ cup cream of coconut
- ¼ cup Key lime juice, freshly squeezed (about 6–8 Key limes)
- ¼ cup white rum (optional, for an adult version)
- 2 tablespoons lime simple syrup (recipe follows)
- ½ cup ice cubes (more if needed to reach desired consistency)
- Lime wedges, for garnish
- Pineapple wedges, for garnish
- ½ cup granulated sugar
- ½ cup water
- Zest of 2 Key limes
Instructions
- Combine Sugar, Water, and Lime Zest: In a small saucepan, combine the granulated sugar, water, and Key lime zest.
- Heat and Stir: Place the saucepan over medium heat. Stir constantly until the sugar is completely dissolved (3-5 minutes).
- Simmer: Bring the mixture to a gentle simmer for 1 minute.
- Cool and Strain: Remove from heat and let cool completely. Strain through a fine-mesh sieve to remove the lime zest.
- Store: Pour into a clean glass jar and store in the refrigerator for up to 2 weeks.
- Combine Ingredients in Blender: In a high-powered blender, combine the frozen pineapple chunks, frozen mango chunks, cream of coconut, Key lime juice, white rum (if using), lime simple syrup, and ice cubes.
- Blend Until Smooth: Blend on high speed until completely smooth and creamy (1-2 minutes). If too thick, add more Key lime juice or water (1 tablespoon at a time). If too thin, add more ice.
- Taste and Adjust: Adjust sweetness or tartness to your liking with more lime simple syrup or Key lime juice.
- Achieve the Perfect Consistency: Blend until thick, frosty, and easily sippable.
- Pour into Glasses: Pour the Key Lime Colada into chilled glasses.
- Garnish: Garnish each glass with a lime wedge and a pineapple wedge.
- Serve Immediately: Serve immediately.

- For a virgin version, omit the rum.
- Adjust the amount of lime simple syrup and Key lime juice to suit your taste.
- Using frozen fruit is crucial for achieving the thick, frosty texture of a colada.
- Cream of coconut is a sweetened coconut product that is specifically designed for cocktails.
- Key limes are smaller and more tart than regular limes.
