Instructions

  1. Combine Sugar, Water, and Lime Zest: In a small saucepan, combine the granulated sugar, water, and Key lime zest.
  2. Heat and Stir: Place the saucepan over medium heat. Stir constantly until the sugar is completely dissolved (3-5 minutes).
  3. Simmer: Bring the mixture to a gentle simmer for 1 minute.
  4. Cool and Strain: Remove from heat and let cool completely. Strain through a fine-mesh sieve to remove the lime zest.
  5. Store: Pour into a clean glass jar and store in the refrigerator for up to 2 weeks.
  6. Combine Ingredients in Blender: In a high-powered blender, combine the frozen pineapple chunks, frozen mango chunks, cream of coconut, Key lime juice, white rum (if using), lime simple syrup, and ice cubes.
