- 1 pound ground beef (preferably 80/20 for juiciness)
- 1/2 pound ground pork
- 1/2 cup panko breadcrumbs
- 1/4 cup milk
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg
- 2 tablespoons vegetable oil (for frying)
- 1/2 cup ketchup
- 1/4 cup Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon Dijon mustard (optional)
- Steamed rice
- Fresh parsley, chopped (for garnish)
- Grated daikon radish (optional)
Instructions
- In a small bowl, combine the panko breadcrumbs and milk. Let it sit for about 10 minutes until the breadcrumbs absorb the milk and become soft.
- Heat a small skillet over medium heat. Add a splash of oil and sauté the finely chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the ground beef and ground pork. Add the soaked panko mixture, sautéed onions and garlic, soy sauce, Worcestershire sauce, salt, pepper, and the egg. Mix until just combined, being careful not to overmix.
- Divide the mixture into four equal portions and shape each into a patty, about 1 inch thick. Make a slight indentation in the center of each patty.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, place the patties in the skillet, avoiding overcrowding.
- Cook for about 4-5 minutes on one side without moving them. Flip the patties and reduce the heat to medium. Cook for another 4-5 minutes on the other side.
- Ensure the patties are cooked through (internal temperature should reach 160°F/70°C). Remove from skillet and cover loosely with foil to keep warm.
- In the same skillet, reduce heat to medium-low. Add the ketchup, Worcestershire sauce, soy sauce, sugar, and Dijon mustard (if using).
- Stir well, scraping up any browned bits from the skillet. Let it simmer for about 3-4 minutes until it thickens slightly. Adjust seasoning if necessary.
- Serve a hamburger steak on a plate alongside steamed rice. Drizzle the sauce over the steak.
- Garnish with freshly chopped parsley and grated daikon radish if desired.
