Ingredients

  • 5 lbs Yukon Gold potatoes, peeled and quartered
  • 1 cup chicken broth (or vegetable broth for vegetarian option)
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup butter, unsalted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnishes: chopped chives, sour cream, bacon bits

Instructions

  1. Place quartered potatoes into the Instant Pot.
  2. Pour in chicken broth (or vegetable broth).
  3. Seal the Instant Pot lid, ensuring the valve is set to “Sealing.”
  4. Set the Instant Pot to “Manual” or “Pressure Cook” mode for 12 minutes.
  5. While potatoes cook, soften cream cheese.
  6. Let the Instant Pot naturally pressure release for 10 minutes.
  7. Carefully quick release any remaining pressure by turning the valve to “Venting.”
  8. Once all pressure is released, open the Instant Pot lid.
  9. Drain the potatoes in a colander and return them to the Instant Pot.
  10. Add softened cream cheese, heavy cream, butter, garlic powder, and onion powder to the potatoes.
  11. Mash the potatoes using an electric hand mixer or potato masher until desired consistency is reached.
  12. Season with salt and pepper to taste.
  13. Stir to ensure all ingredients are evenly distributed.
  14. Serve hot and garnish as desired.

  • Potato Variety: Yukon Gold potatoes are recommended, but Russet or red potatoes can also be used.
