Instructions

  1. Prepare Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and cayenne pepper (if using).
  2. Incorporate Butter: Cut in cold, cubed butter using a pastry blender or fingertips until the mixture resembles coarse crumbs.
  3. Add Cheese and Chiles: Stir in grated cheddar cheese and chopped green chiles until evenly distributed.
  4. Add Buttermilk: Pour in cold buttermilk and gently stir until just combined. Be careful not to overmix.
  5. Shape the Dough: Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle.
  6. Laminate the Dough: Fold the dough in half, then gently pat it back into a 1-inch thick rectangle. Repeat this folding and patting process 3-4 times.
  7. Cut Biscuits: After the final fold, pat the dough into a 1-inch thick rectangle. Using a 2-inch biscuit cutter (or a sharp knife), cut out the biscuits. Try not to twist the cutter as you press down.
  8. Arrange on Baking Sheet: Place the biscuits onto a baking sheet lined with parchment paper. Arrange them so they are just touching each other.
