  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Whole cloves (optional, for studding the ham)
  • Fresh herbs (like rosemary or thyme, for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Remove the ham from its packaging and place it on a large cutting board. Score the thick layer of skin or fat in a diamond pattern with a sharp knife.
  3. Insert whole cloves into the center of each diamond for added flavor and presentation (optional).
  4. In a medium saucepan, mix brown sugar, honey, Dijon mustard, apple cider vinegar, ground cinnamon, ground cloves, ground ginger, black pepper, and salt.
  5. Place the saucepan over medium heat, stirring until the sugar dissolves and the glaze is smooth (about 5-7 minutes).
  6. Adjust sweetness or tanginess by adding more honey, brown sugar, or vinegar as desired.
  7. Place a rack inside a large roasting pan.
  8. Position the ham, cut side down, on the rack in the roasting pan.
  9. Generously brush the glaze all over the ham, ensuring it gets into the scored cuts. Reserve some glaze for later.
  10. Tent the ham loosely with aluminum foil.
  11. Bake for about 15-18 minutes per pound (approximately 2 to 2.5 hours for an 8-pound ham).
  12. After the first hour, remove the foil and baste the ham with reserved glaze every 30 minutes.
  13. Use a meat thermometer to ensure the internal temperature reaches 140°F (60°C).
  14. Apply a final layer of glaze in the last 30 minutes of cooking.
  15. Once done, let the ham rest for 15-20 minutes before slicing.
