- Prepare the Beef Tips: Pat the beef tips dry with paper towels and season generously with salt and black pepper.
- Sear the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the beef tips in a single layer and sear for 2-3 minutes per side, until browned. Remove from skillet and set aside.
- Make the Garlic Rosemary Sauce: Reduce heat to medium. Add the minced garlic to the skillet and cook for 30 seconds, or until fragrant. Add the chopped rosemary, dried thyme, and red pepper flakes (if using). Cook for another 30 seconds, stirring constantly.
- Pour in the beef broth, balsamic vinegar, and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- In a small bowl, whisk together the cornstarch and cold water until smooth. Slowly pour the cornstarch slurry into the simmering sauce, whisking constantly, until the sauce thickens to your desired consistency (1-2 minutes).
- Combine the Beef and Sauce: Return the seared beef tips to the skillet with the sauce. Toss to coat. Simmer for 5-7 minutes, or until the beef is cooked to your desired doneness.
- Taste and adjust seasoning as needed.
- Serving: Remove from heat. Garnish with fresh parsley, if desired. Serve immediately over rice, mashed potatoes, pasta, or your favorite side dish.
