  • 1 box of Funfetti cake mix (15.25 oz)
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 large eggs
  • 1 cup of rainbow sprinkles (plus extra for topping)
  • 2 cups of heavy cream
  • 1 cup of sweetened condensed milk
  • 1 teaspoon of vanilla extract
  • 1/2 cup of mini marshmallows (optional)
  • 1/2 cup of crushed cookies (optional, for added texture)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
  2. In a large mixing bowl, combine the Funfetti cake mix, water, vegetable oil, and eggs. Using an electric mixer, beat the mixture on medium speed for about 2 minutes until it’s smooth and well combined.
  3. Gently fold in 1 cup of rainbow sprinkles into the batter.
  4. Divide the batter evenly between the prepared cake pans. Use a spatula to smooth the tops if necessary.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  7. In a large mixing bowl, pour in 2 cups of heavy cream. Using an electric mixer, whip the cream on high speed until stiff peaks form (about 3-5 minutes).
  8. In another bowl, combine 1 cup of sweetened condensed milk and 1 teaspoon of vanilla extract. Mix well until combined.
  9. Gently fold the whipped cream into the sweetened condensed milk mixture.
  10. If using, fold in mini marshmallows or crushed cookies for extra flavor and texture.
  11. Once the cakes are completely cooled, crumble one layer into small pieces in a large mixing bowl.
  12. In a large serving dish or a 9×13 inch baking dish, spread half of the crumbled cake evenly across the bottom.
  13. Pour half of the ice cream mixture over the crumbled cake, spreading it evenly with a spatula.
  14. Repeat the layers by adding the remaining crumbled cake on top of the ice cream layer.
  15. Pour the remaining ice cream mixture over the second layer of cake, smoothing it out to cover the cake completely.
  16. Sprinkle additional rainbow sprinkles on top.
  17. Cover the dish tightly with plastic wrap or aluminum foil to prevent freezer burn.
  18. Place the dish in the freezer and let it freeze for at least 4-6 hours, or overnight for a firmer texture.
