- 1 box of Funfetti cake mix (15.25 oz)
- 1 cup of water
- 1/3 cup of vegetable oil
- 3 large eggs
- 1 cup of rainbow sprinkles (plus extra for topping)
- 2 cups of heavy cream
- 1 cup of sweetened condensed milk
- 1 teaspoon of vanilla extract
- 1/2 cup of mini marshmallows (optional)
- 1/2 cup of crushed cookies (optional, for added texture)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
- In a large mixing bowl, combine the Funfetti cake mix, water, vegetable oil, and eggs. Using an electric mixer, beat the mixture on medium speed for about 2 minutes until its smooth and well combined.
- Gently fold in 1 cup of rainbow sprinkles into the batter.
- Divide the batter evenly between the prepared cake pans. Use a spatula to smooth the tops if necessary.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- In a large mixing bowl, pour in 2 cups of heavy cream. Using an electric mixer, whip the cream on high speed until stiff peaks form (about 3-5 minutes).
- In another bowl, combine 1 cup of sweetened condensed milk and 1 teaspoon of vanilla extract. Mix well until combined.
- Gently fold the whipped cream into the sweetened condensed milk mixture.
- If using, fold in mini marshmallows or crushed cookies for extra flavor and texture.
- Once the cakes are completely cooled, crumble one layer into small pieces in a large mixing bowl.
- In a large serving dish or a 9×13 inch baking dish, spread half of the crumbled cake evenly across the bottom.
- Pour half of the ice cream mixture over the crumbled cake, spreading it evenly with a spatula.
- Repeat the layers by adding the remaining crumbled cake on top of the ice cream layer.
- Pour the remaining ice cream mixture over the second layer of cake, smoothing it out to cover the cake completely.
- Sprinkle additional rainbow sprinkles on top.
- Cover the dish tightly with plastic wrap or aluminum foil to prevent freezer burn.
- Place the dish in the freezer and let it freeze for at least 4-6 hours, or overnight for a firmer texture.
