Ingredients
Scale
- 1 lb ground beef or turkey
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup crumbled feta cheese
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
- Add the ground beef or turkey, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.
- Sprinkle in the chipotle chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine and let cook for another 2-3 minutes to meld the flavors.
- In a separate skillet, heat the tortillas one at a time over medium heat, or use a griddle. Warm each tortilla for about 30 seconds on each side until pliable and slightly toasted.
- Keep the warmed tortillas covered with a clean kitchen towel to retain warmth and softness.
- Take a warm tortilla and place a generous spoonful of the meat filling in the center.
- Sprinkle crumbled feta cheese over the meat.
- Add shredded lettuce on top for crunch.
- Add diced tomatoes for freshness and color.
- Top with slices of avocado for creaminess.
- Garnish with fresh cilantro.
- Repeat the assembly for the remaining tortillas and filling.
- Arrange the tacos on a large platter or individual plates.
- Serve with lime wedges on the side for squeezing over the tacos.
- Add any additional toppings like sour cream, salsa, or hot sauce if desired.
Notes
- These tacos are best enjoyed fresh, but leftover filling can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove before assembling.
- Feel free to customize toppings based on your preferences!
