  • 1 cup crumbled feta cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
  2. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning.
  3. Add the ground beef or turkey, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.
  4. Sprinkle in the chipotle chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine and let cook for another 2-3 minutes to meld the flavors.
  5. In a separate skillet, heat the tortillas one at a time over medium heat, or use a griddle. Warm each tortilla for about 30 seconds on each side until pliable and slightly toasted.
  6. Keep the warmed tortillas covered with a clean kitchen towel to retain warmth and softness.
  7. Take a warm tortilla and place a generous spoonful of the meat filling in the center.
  8. Sprinkle crumbled feta cheese over the meat.
  9. Add shredded lettuce on top for crunch.
  10. Add diced tomatoes for freshness and color.
  11. Top with slices of avocado for creaminess.
  12. Garnish with fresh cilantro.
  13. Repeat the assembly for the remaining tortillas and filling.
