Instructions

  1. In a small saucepan, combine the sugar and water.
  2. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. This usually takes about 3-5 minutes. Make sure no sugar crystals remain!
  3. Remove from heat and let cool completely. You can store the simple syrup in an airtight container in the refrigerator for up to 2 weeks.
  4. Place the chopped cucumbers and fresh mint leaves into a high-powered blender. Don’t skimp on the mint! It really makes the drink refreshing.
  5. Add the lime juice and simple syrup (or agave nectar/honey). Start with 1/4 cup of simple syrup and adjust to your taste later. Remember, you can always add more sweetness, but you can’t take it away!
  6. Pour in 4 cups of cold water.

  15. If the consistency is too thick, add more cold water until it reaches your preferred consistency. I personally like it a little thinner, but it’s all about personal preference.
  16. Cover the bowl or pitcher and refrigerate for at least 30 minutes to allow the flavors to meld. Chilling is essential for a truly refreshing drink! You can chill it for longer, even overnight, for an even more intense flavor.
  17. Fill glasses with ice cubes.
  18. Pour the chilled cucumber-mint drink over the ice.
