Description
Crispy Garlic Butter Potatoes are a delicious side dish made from tender baby potatoes that are boiled, smashed, and pan-fried to a golden crisp. Infused with garlic, thyme, and smoked paprika, these potatoes offer a perfect balance of crispy exterior and fluffy interior, making them an ideal accompaniment to any meal.
Ingredients
Scale
- 2 pounds baby potatoes (or small Yukon Gold potatoes)
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the baby potatoes under cold running water and scrub off any dirt. Keep the skins on for extra texture and flavor.
- In a large pot, add the cleaned potatoes and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
- Drain the potatoes in a colander and let them cool for 5-10 minutes.
- Place each potato on a cutting board and gently press down with the bottom of a glass or a potato masher until flattened to about ½ inch thick.
- In a large skillet, combine unsalted butter and olive oil over medium heat until melted.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned. Stir in dried thyme and smoked paprika, seasoning with salt and black pepper to taste.
- Increase heat to medium-high until the garlic butter mixture is hot and bubbling.
- Carefully add the smashed potatoes to the skillet, frying in batches if necessary. Cook for 4-5 minutes on each side until golden brown and crispy.
- Use a slotted spoon to remove the crispy potatoes and place them on a plate lined with paper towels to absorb excess oil.
- Transfer the cooked potatoes to a serving platter and drizzle with any remaining garlic butter from the skillet.
- Sprinkle chopped fresh parsley over the potatoes for garnish.
- Enjoy these crispy garlic butter potatoes hot as a side dish or snack.
Notes
- Choose baby potatoes or small Yukon Golds for the best texture.
- Boiling the potatoes before smashing is essential for achieving a tender inside and crispy outside.
