  • Author: Maria
  • Total Time: 45 minutes
  • Yield: 4-6 servings 1x

Description

Crispy Garlic Butter Potatoes are a delicious side dish made from tender baby potatoes that are boiled, smashed, and pan-fried to a golden crisp. Infused with garlic, thyme, and smoked paprika, these potatoes offer a perfect balance of crispy exterior and fluffy interior, making them an ideal accompaniment to any meal.

Ingredients

Scale
  • 2 pounds baby potatoes (or small Yukon Gold potatoes)
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the baby potatoes under cold running water and scrub off any dirt. Keep the skins on for extra texture and flavor.
  2. In a large pot, add the cleaned potatoes and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  3. Drain the potatoes in a colander and let them cool for 5-10 minutes.
  4. Place each potato on a cutting board and gently press down with the bottom of a glass or a potato masher until flattened to about ½ inch thick.
  5. In a large skillet, combine unsalted butter and olive oil over medium heat until melted.
  6. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned. Stir in dried thyme and smoked paprika, seasoning with salt and black pepper to taste.
  7. Increase heat to medium-high until the garlic butter mixture is hot and bubbling.
  8. Carefully add the smashed potatoes to the skillet, frying in batches if necessary. Cook for 4-5 minutes on each side until golden brown and crispy.
  9. Use a slotted spoon to remove the crispy potatoes and place them on a plate lined with paper towels to absorb excess oil.
  10. Transfer the cooked potatoes to a serving platter and drizzle with any remaining garlic butter from the skillet.
  11. Sprinkle chopped fresh parsley over the potatoes for garnish.
  12. Enjoy these crispy garlic butter potatoes hot as a side dish or snack.

Notes

  • Choose baby potatoes or small Yukon Golds for the best texture.
  • Boiling the potatoes before smashing is essential for achieving a tender inside and crispy outside.
  • Adjust seasoning to your taste; add red pepper flakes for heat or experiment with different herbs.
