  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. Bring a large pot of water to a boil.
  2. Add the udon noodles and cook according to package instructions (about 8-10 minutes) until tender but still firm.
  3. Drain and rinse under cold water. Set aside.
  4. In a large skillet or wok, heat olive oil over medium-high heat.
  5. Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through.
  6. Remove chicken from skillet and set aside.
  7. In the same skillet, melt butter and add chopped onion. Sauté for 3-4 minutes until translucent.
  8. Add minced garlic and sliced mushrooms, cooking for another 5-6 minutes until mushrooms are tender.
  9. Season with salt and pepper.
  10. Pour in chicken broth and soy sauce, stirring to combine.
  11. Bring to a gentle simmer for 3-4 minutes.
  12. Reduce heat to low, slowly add heavy cream while stirring continuously.
  13. For a thicker sauce, mix cornstarch with water and add to the sauce, simmering for another 2-3 minutes.
  14. Return cooked chicken to the skillet, stirring to coat in the sauce.
  15. Add cooked udon noodles and gently toss until well coated and heated through (2-3 minutes).
  16. Adjust seasoning with salt and pepper if needed.
  17. Serve in bowls, garnished with chopped green onions and sesame seeds if desired.
