- 8 oz udon noodles
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups mushrooms, sliced (shiitake and button mushrooms recommended)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon cornstarch (optional, for thickening)
- Salt and pepper to taste
- Chopped green onions for garnish
- Sesame seeds for garnish (optional)
Instructions
- Bring a large pot of water to a boil.
- Add the udon noodles and cook according to package instructions (about 8-10 minutes) until tender but still firm.
- Drain and rinse under cold water. Set aside.
- In a large skillet or wok, heat olive oil over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through.
- Remove chicken from skillet and set aside.
- In the same skillet, melt butter and add chopped onion. Sauté for 3-4 minutes until translucent.
- Add minced garlic and sliced mushrooms, cooking for another 5-6 minutes until mushrooms are tender.
- Season with salt and pepper.
- Pour in chicken broth and soy sauce, stirring to combine.
- Bring to a gentle simmer for 3-4 minutes.
- Reduce heat to low, slowly add heavy cream while stirring continuously.
- For a thicker sauce, mix cornstarch with water and add to the sauce, simmering for another 2-3 minutes.
- Return cooked chicken to the skillet, stirring to coat in the sauce.
- Add cooked udon noodles and gently toss until well coated and heated through (2-3 minutes).
- Adjust seasoning with salt and pepper if needed.
- Serve in bowls, garnished with chopped green onions and sesame seeds if desired.
