Whimsical cotton candy flavored cookies with a colorful swirl and creamy cream cheese topping.

Ingredients

Scale
  • 2 1/4 cups (281g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (2 sticks or 226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cotton candy flavoring (oil-based is best)
  • Pink and blue gel food coloring
  • 4 ounces cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon cotton candy flavoring (oil-based is best)
  • Pink and blue gel food coloring
  • Cotton candy sprinkles
  • Edible glitter

Instructions

  1. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  2. Cream Butter and Sugars: In a large bowl (or stand mixer), cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes). Scrape down the sides of the bowl as needed.
  3. Add Eggs and Extracts: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and cotton candy flavoring.
  4. Gradually Add Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Divide and Color the Dough: Divide the dough in half. Add pink gel food coloring to one half and blue gel food coloring to the other half. Mix until evenly colored.
  6. Chill the Dough: Wrap each half of the dough in plastic wrap and chill in the refrigerator for at least 30 minutes (up to 24 hours).
  7. Cream Cheese and Sugar: In a small bowl, beat together the softened cream cheese and granulated sugar until smooth and creamy.
  8. Add Flavoring and Color: Stir in the cotton candy flavoring. Divide the cream cheese mixture in half. Add pink gel food coloring to one half and blue gel food coloring to the other half. Mix until evenly colored.
  9. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  10. Roll the Dough: On a lightly floured surface, roll out each color of dough to about 1/4 inch thickness.
  11. Create the Swirl: Place one sheet of colored dough (pink or blue) on top of the other. Gently roll them together to create a swirl effect.
  12. Cut Out Cookies: Use a cookie cutter to cut out cookies from the swirled dough.
  13. Add the Swirl: Place the cut-out cookies on the prepared baking sheets, leaving about 2 inches between each cookie. Dollop small amounts of the pink and blue cream cheese swirl onto each cookie. Use a toothpick or skewer to gently swirl the cream cheese into the cookie dough.
  14. Decorate (Optional): If desired, sprinkle the cookies with cotton candy sprinkles or edible glitter before baking.
  15. Bake: Bake for 8-10 minutes, or until the edges of the cookies are lightly golden brown.
  16. Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Use oil-based cotton candy flavoring for the best flavor.
  • Don’t overbake the cookies.
  • Chilling the dough is essential.
  • Make sure your butter and cream cheese are properly softened.
  • Gel food coloring is recommended.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
  • Unbaked cookie dough can be frozen for up to 2 months. Thaw in the refrigerator overnight before baking.
  • Baked cookies can be frozen for up to 1 month.
  • If cookies are spreading too much, make sure you chilled the dough for at least 30 minutes. You can also try adding a tablespoon or two of flour to the dough.
  • If cookies are too dry, don’t overbake the cookies. Also, make sure you’re using the correct amount of butter and sugar.
  • If cookies are too tough, don’t overmix the dough. Overmixing develops the gluten in the flour, which can result in tough cookies.
  • If the cotton candy flavor is not strong enough, use oil-based cotton candy flavoring and add a little extra.
