Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips (optional)
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ cup whole milk (or more for desired consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed until smooth, about 2-3 minutes.
  4. Carefully stir in the boiling water until the batter is thin and well combined. If using, fold in the chocolate chips.
  5. Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
  6. Evenly divide the batter between the two prepared pans.
  7. Bake in the preheated oven for 30-35 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  8. Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
  9. In a large mixing bowl, beat the softened butter with a hand mixer until creamy, about 2 minutes.
  10. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined, then increase to medium speed.
  11. Add the vanilla extract and ¼ cup of whole milk. Beat on high speed for 2-3 minutes until the frosting is light and fluffy. Adjust the consistency with more milk if needed.
  12. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top.
  13. Place the second layer on top and frost the top and sides of the cake.
  14. Decorate as desired and enjoy your Chocolate Cake Delight!
