  • 1 tablespoon sugar

  • 1 tablespoon instant yeast
  • 1 ½ cups warm water (about 110°F)
  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, finely chopped
  • 1 tablespoon olive oil (for greasing)
  • 1 tablespoon baking soda (for boiling water)
  • 1 egg (for egg wash)
  • Extra shredded cheddar cheese (for topping)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Whisk together to ensure even distribution.
  2. Gradually pour in the warm water while stirring with a wooden spoon or spatula. Switch to your hands once the dough begins to come together.
  3. Add the shredded cheddar cheese and chopped jalapeños to the dough, sprinkling them evenly before kneading.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. Add more flour if too sticky.
  5. Shape the dough into a ball and place it in a greased bowl. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Punch down the risen dough gently to release air. Turn it out onto a floured surface and divide into 8 equal pieces.
  7. Roll each piece into a ball and poke a hole through the center to form a bagel shape. Stretch the hole slightly.
  8. Place the shaped bagels on a parchment-lined baking sheet, leaving space between them. Cover and let rest for 20-30 minutes.
  9. Bring a large pot of water to a boil and add the baking soda.
  10. Boil each bagel for about 1 minute on each side, using a slotted spoon to flip them gently. Drain and place back on the baking sheet.
  11. Preheat your oven to 425°F (220°C).
  12. Whisk the egg for an egg wash and brush it over the top of each bagel.
  13. Sprinkle extra shredded cheddar cheese on top and add any additional toppings if desired.
  14. Bake the bagels for 20-25 minutes until golden brown, rotating the baking sheet halfway through.
  15. Remove from the oven and let cool on a wire rack.
