Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeño, seeded and minced (optional)
  • 12 corn tortillas
  • Optional toppings: shredded cabbage, crumbled cotija cheese, sour cream or Greek yogurt, hot sauce

Instructions

  1. Roast the Cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly browned.
  2. Prepare the Avocado Crema: Mash avocado until smooth. Add red onion, cilantro, lime juice, and jalapeño (if using). Stir well and refrigerate until ready to use.
  3. Warm the Tortillas: Warm tortillas using your preferred method (microwave, skillet, or oven).
  4. Assemble the Tacos: Place roasted cauliflower in the center of each tortilla. Top with avocado crema and any desired toppings.
  5. Serve immediately and enjoy!

Notes

  • Don’t overcrowd the baking sheet when roasting the cauliflower.
  • Use ripe avocados for the creamiest avocado crema.
  • Warm tortillas are more pliable and less likely to break.
  • Adjust seasoning to your liking.
