- 1 large head of cauliflower, cut into florets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 ripe avocado
- 1/4 cup red onion, finely diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 jalapeño, seeded and minced (optional)
- 12 corn tortillas
- Optional toppings: shredded cabbage, crumbled cotija cheese, sour cream or Greek yogurt, hot sauce
Instructions
- Roast the Cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and slightly browned.
- Prepare the Avocado Crema: Mash avocado until smooth. Add red onion, cilantro, lime juice, and jalapeño (if using). Stir well and refrigerate until ready to use.
- Warm the Tortillas: Warm tortillas using your preferred method (microwave, skillet, or oven).
- Assemble the Tacos: Place roasted cauliflower in the center of each tortilla. Top with avocado crema and any desired toppings.
- Serve immediately and enjoy!
Notes
- Don’t overcrowd the baking sheet when roasting the cauliflower.
- Use ripe avocados for the creamiest avocado crema.
- Warm tortillas are more pliable and less likely to break.
