Fresh, vibrant carrot juice made easily in a Vitamix! Customize with ginger, lemon, and sweetener for a healthy and delicious drink.

- 4 large carrots, peeled and roughly chopped
- 1/2 inch ginger, peeled (optional)
- 1/4 lemon, peeled (optional)
- 1/2 cup water (more or less, depending on desired consistency)
- 1/4 teaspoon turmeric powder (optional)
- Pinch of black pepper (optional)
- 1 tablespoon honey or maple syrup (optional)
- Ice cubes (optional, for serving)
Instructions
- Prepare the Carrots: Wash, peel, and roughly chop the carrots into 1-2 inch pieces.
- Prepare Ginger and Lemon (Optional): Peel and roughly chop the ginger and lemon (removing the white pith from the lemon).
- Load the Vitamix: Add carrots, ginger, lemon (if using), turmeric (if using), black pepper (if using), and water to the Vitamix.
- Blending Time: Secure the lid and blend on low, gradually increasing to high. Blend for 30-60 seconds until smooth. Add more water if needed to reach desired consistency.
- Check the Consistency: Add more water if the juice is too thick.
- Strain the Juice (Optional): Place a fine-mesh sieve or nut milk bag over a bowl or pitcher. Pour the juice through and let it drip. Gently squeeze the nut milk bag (if using) to extract remaining juice. Discard the pulp.
- Taste and Adjust Sweetness: Add honey or maple syrup to taste.
- Chill (Optional): Refrigerate for at least 30 minutes.
- Serve and Enjoy: Pour into a glass with ice (optional). Serve immediately.
Notes
- Use organic carrots if possible.
- Experiment with adding other fruits and vegetables like apples, oranges, beets, or spinach.
- Add a pinch of cayenne pepper for a spicy kick.
- Add a tablespoon of coconut milk or almond milk for a creamier texture.
- Boost the nutrients by adding a teaspoon of chia seeds or flax seeds.
- Store leftover juice in an airtight container in the refrigerator for up to 24 hours. Stir before serving.
- To clean your Vitamix, fill it halfway with water, add a drop of dish soap, and blend on high for 30-60 seconds. Rinse thoroughly.
