  • 1 box (15.25 ounces) cake mix (vanilla, chocolate, strawberry, or lemon)
  • 2 large eggs
  • 1/2 cup (1 stick) unsalted butter, softened
  • Optional: 1/2 cup chocolate chips, sprinkles, chopped nuts, dried fruit, etc. (I’m using rainbow sprinkles)

Instructions

  1. Cream the Butter: In a large bowl, cream together the softened butter and the cake mix until well combined and crumbly.
  2. Add the Eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  3. Incorporate Mix-ins (Optional): Gently fold in your chosen mix-ins until evenly distributed.
  4. Chill the Dough (Important!): Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (longer is better).
  5. Preheat the Oven: Preheat your oven to 350°F (175°C).
  6. Prepare Baking Sheets: Line baking sheets with parchment paper or silicone baking mats.
  7. Scoop the Dough: Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  8. Bake: Bake for 8-10 minutes, or until the edges are lightly golden brown and the centers are set.
  9. Cool: Remove the baking sheets from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Cake Mix Flavors: Experiment with different cake mix flavors.
  • Add Extracts: Enhance the flavor with a few drops of extract (vanilla, almond, lemon, peppermint).
  • Frosting/Glaze: Frost or glaze the cooled cookies.
  • Sandwich Cookies: Make sandwich cookies with frosting or jam.
  • Nutella Swirl: Swirl Nutella into the dough.
  • Peanut Butter Chips: Add peanut butter chips.
  • Oatmeal Cookies: Add 1/2 cup rolled oats.
