- 1 box (15.25 ounces) cake mix (vanilla, chocolate, strawberry, or lemon)
- 2 large eggs
- 1/2 cup (1 stick) unsalted butter, softened
- Optional: 1/2 cup chocolate chips, sprinkles, chopped nuts, dried fruit, etc. (I’m using rainbow sprinkles)
Instructions
- Cream the Butter: In a large bowl, cream together the softened butter and the cake mix until well combined and crumbly.
- Add the Eggs: Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
- Incorporate Mix-ins (Optional): Gently fold in your chosen mix-ins until evenly distributed.
- Chill the Dough (Important!): Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (longer is better).
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare Baking Sheets: Line baking sheets with parchment paper or silicone baking mats.
- Scoop the Dough: Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
- Bake: Bake for 8-10 minutes, or until the edges are lightly golden brown and the centers are set.
- Cool: Remove the baking sheets from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

- Cake Mix Flavors: Experiment with different cake mix flavors.
- Add Extracts: Enhance the flavor with a few drops of extract (vanilla, almond, lemon, peppermint).
- Frosting/Glaze: Frost or glaze the cooled cookies.
- Sandwich Cookies: Make sandwich cookies with frosting or jam.
- Nutella Swirl: Swirl Nutella into the dough.
- Peanut Butter Chips: Add peanut butter chips.
- Oatmeal Cookies: Add 1/2 cup rolled oats.
- Espresso Powder: Add a teaspoon of espresso powder to chocolate cake mix.
- Sea Salt: Sprinkle sea salt on top before baking.
- Troubleshooting:
- Flat Cookies: Chill dough longer, use less soft butter, add flour.
- Dry Cookies: Don’t overbake.
- Hard Cookies: Don’t overmix.
- Sticking Cookies: Use parchment paper or silicone mats.
- Storage: Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
