  • 4 cups of water (for cooking tapioca pearls)
  • 1/2 cup of tapioca pearls (boba)
  • 1/4 cup of sugar (adjust to taste)
  • 1 cup of milk (dairy or non-dairy, like almond or oat milk)
  • Ice cubes
  • Optional: lemon or lime juice for a citrus twist
  • Optional: sweetened condensed milk for a creamier texture

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Once boiling, remove the saucepan from heat and add 1 cup of dried butterfly pea flowers or 2-3 tea bags.
  3. Let the tea steep for about 10-15 minutes. The longer you steep, the deeper the blue color will be.
  4. After steeping, strain the tea into a pitcher to remove the flowers or tea bags. Allow it to cool to room temperature.
  5. If you want to add sweetness, stir in 1/4 cup of sugar while the tea is still warm, so it dissolves easily. Adjust the sweetness to your liking.
  6. In a separate pot, bring 4 cups of water to a boil.
  7. Once boiling, add 1/2 cup of tapioca pearls to the pot. Stir gently to prevent them from sticking together.
  8. Cook the pearls according to the package instructions, usually around 5-10 minutes, until they become translucent and chewy.
  9. Once cooked, remove the pot from heat and let the pearls sit in the hot water for an additional 5 minutes.
  10. Drain the pearls and rinse them under cold water to stop the cooking process.
  11. To sweeten the pearls, you can soak them in a mixture of 1/4 cup of sugar and 1/4 cup of water for about 10 minutes. This step is optional but adds a nice flavor!
  12. Take a tall glass and add about 1/4 cup of the sweetened tapioca pearls to the bottom.
  13. Fill the glass with ice cubes, leaving some space at the top for the tea and milk.
  14. Pour the cooled butterfly pea flower tea over the ice and pearls, filling the glass about halfway.
  15. Next, gently pour in 1 cup of milk (or your preferred non-dairy alternative) over the tea. You can pour it slowly to create a beautiful layered effect.
  16. If you want to add a citrus twist, squeeze in some lemon or lime juice. This will change the color of the tea to a lovely purple hue!
