- 1 cup of butterfly pea flower tea (dried flowers or tea bags)
- 2 cups of water (for tea)
- 4 cups of water (for cooking tapioca pearls)
- 1/2 cup of tapioca pearls (boba)
- 1/4 cup of sugar (adjust to taste)
- 1 cup of milk (dairy or non-dairy, like almond or oat milk)
- Ice cubes
- Optional: lemon or lime juice for a citrus twist
- Optional: sweetened condensed milk for a creamier texture
Instructions
- In a medium saucepan, bring 2 cups of water to a boil.
- Once boiling, remove the saucepan from heat and add 1 cup of dried butterfly pea flowers or 2-3 tea bags.
- Let the tea steep for about 10-15 minutes. The longer you steep, the deeper the blue color will be.
- After steeping, strain the tea into a pitcher to remove the flowers or tea bags. Allow it to cool to room temperature.
- If you want to add sweetness, stir in 1/4 cup of sugar while the tea is still warm, so it dissolves easily. Adjust the sweetness to your liking.
- In a separate pot, bring 4 cups of water to a boil.
- Once boiling, add 1/2 cup of tapioca pearls to the pot. Stir gently to prevent them from sticking together.
- Cook the pearls according to the package instructions, usually around 5-10 minutes, until they become translucent and chewy.
- Once cooked, remove the pot from heat and let the pearls sit in the hot water for an additional 5 minutes.
- Drain the pearls and rinse them under cold water to stop the cooking process.
- To sweeten the pearls, you can soak them in a mixture of 1/4 cup of sugar and 1/4 cup of water for about 10 minutes. This step is optional but adds a nice flavor!
- Take a tall glass and add about 1/4 cup of the sweetened tapioca pearls to the bottom.
- Fill the glass with ice cubes, leaving some space at the top for the tea and milk.
- Pour the cooled butterfly pea flower tea over the ice and pearls, filling the glass about halfway.
- Next, gently pour in 1 cup of milk (or your preferred non-dairy alternative) over the tea. You can pour it slowly to create a beautiful layered effect.
- If you want to add a citrus twist, squeeze in some lemon or lime juice. This will change the color of the tea to a lovely purple hue!
- For an extra creamy texture, drizzle some sweetened condensed milk on top. This is optional but highly recommended for a richer flavor.
- Give the drink a gentle stir to combine the flavors, but be careful not to disturb the layers too much if you want to keep that beautiful presentation.
